Egg on Sausage Happy Face

Dear Readers,

I know I haven't been blogging new recipes of my boys lately, but am back today. They're now five and three years old, and am so thankful for having them in my life, as they make me a better person. I can't believe how creative I get making their food, and they always like it. This morning I decided to try something different for breakfast, and play a bit with ingredients like sausages, and eggs. I didn't read this recipe from a recipe book, but trusted my imagination. The comments I received where: "Mommy this is so delicious" "I love it Mommy" "Yummy yummy, this is the best sausage ever" I was so happy to make this recipe. As such, I'll keep on testing different recipes, and based on my boys comment, I'll share it on my blog.


Egg on Sausage Happy Face

Ingredients:
5 ground sausages
2 white egg
1 tsp of ground black pepper
1/2 cup of ground oatmeal 
1 tbsp of virgin olive oil

Preparation:
In a blender, add all four ingredients with 1/4 cup of water if needed. 
Remove ground sausage, and pour in a bowl. 
In a non stick frying pan, heat the virgin oil.
Use a spatula to remove ground sausage  from bowl and fry. When one side of the ground sausage looks golden-brownish use a spatula to turn it over, so the other side gets cooked.
Remove sausages from the pan, and serve.
Broil the egg york in the same heated frying pan for 2 mins. When cooked, place the broil egg on the ground sausage.
To complement this recipe, I used pancakes,hot chocolate and banana. You can use any other beverage, fruits, and bread, depending on your child's preference.
I like using banana to make happy faces.

Surprise Oatmeal Cookies

Dear Readers, 

Being a parent has made me more open in accepting constructive feedback and seeing how to improve.
Couple of days ago, I cooked oatmeal and fruit jam for breakfast, and none of my kids ate it. They never liked cooked oatmeal, but I thought this was due to the texture, when they were younger. They just didn't like it. My oldest tried it, with some oatmeal still in his mouth, he said " Mommy it doesn't taste good." Just his facial expression made me understand that he just didn't like it.
Today for breakfast I made some oatmeal cookies and ham omelette. The surprise was I added some raisins and grated carrots, knowing that they are very picky, when it comes to vegetables and dried raisins. 
The results were amazing, they ate everything. I'm so glad I took my kids food critic to make something they like.

Surprise Oatmeal Cookies Crispy or Chewy-- The Choice is Yours.


Ingredients:

3/4 cup butter, softened 175 ml
3/4 cup lightly packed brown sugar 175 ml
1/2 cup granulated sugar 125 ml
1 egg
2 tbsp water 30 ml
2 tsp vanilla 10 ml
3/4 cup all purpose flour ( used Robin Hood flour)
3/4 tsp baking soda 3ml
1 tsp cinnamon 5 ml
3 cups Oats (Robin Hood oats)
1 cups of raisins
1/2 cups of finely grated carrots
Preparation:
Preheat oven at 350•F
•Cream butter, sugars, egg, water and vanilla together on medium speed of electric mixer until light and fluffy.
•Combine flour, soda, and cinnamon. Add to creamed mixture, beating on low speed until blended. Stir on oats, raisins, and carrots.
•Drop by heaping tablespoonfuls onto greased baking sheets.
•Press flat for crips cookies; leave mounded for chewy cookies
•Bake at 350•F (180•C) for 12-20 mins. Or until edges are golden brown. Do not over bake.
Makes 15 to 30 cookies
You can add your favourite vegetables or fruits, as well as the ones your kids don't like much.

Homemade Graham Crust Apple Pie

Good Day Readers,



I know, it's been a while since I last wrote. It has been quite a life journey this last couple of days. Last month I organized a bday party for Keegan, who turned 4 and Alexander, who turned 2. I feel proud of myself for been the mom of two wonderful boys, am blessed.
Enough of that! last weekend, I had some fresh apples harvested at my backyard, and was hoping to make a pie. Unfortunately time wasn't on my side. As such, I postponed it till this Friday. After work, I said "Olivia you got to fulfill your promise" though very tired.

Ingredient:
2 Graham pie crust
 Dough for pie (makes 2 small size balls)
4 cups of peeled, sliced, partially sour apples

Preparation:
Preheat oven350 Degree F
Pour out the sliced apples in the crusts till full, then cover it with well rolled dough pastry. You can design the edges with a fork. Optional-- you may spread over 1 beaten egg to give the dough covering a golden colour.

Let it bake for 3-45 mins
After baking, let it cool for 10 mins then serve.

Delicious Puff Puff or Beignet

Dear Readers,

How're you? I had a very busy weekend as I was bringing to life my long awaited painting project.

In addition to my painting project, got to do all my daily activities on weekends. Though difficult, you got to do what you got to do! 
Having contractors at my home doing their work, and catering for my family was a bit of a hazel. 
Been on the go, I decided to make a yummy appetizer for my boys, which kept them up till lunch and dinner time. This is a Cameroonian famous recipe called beignet or puff puff.

Wheat or white flour beignet/puff 


Ingredients:

1kg of wheat or white flour
1 spoon of salt
15 spoon of sugar
1 pack or 2 1/4 tsp of yeast
1 cup or 250 ml of liquid milk
1 cup of water or more till desired texture
2 litters of vegetable oil to fry

Preparation:

• sieve and mix all dry ingredients (flour, sugar, and salt) in a bowl or large pot
• dilute yeast in water and leave for 20 mins or until yeast rises.
• Pour out yeast in dry ingredients
• add warm milk and water into dry ingredients and mix very well with clean hands or a wooden spatula until soft and fluffy
• add water till you feel the mixture is smooth and fluffy
• texture shouldn't be too hard or soft, but enough to be able to make small balls with fingers
Close or cover pot/bowl for an hour
• pour vegetable oil in a deep saucepan or pot and heat to high
• use dough to make small ball shapes with fingers, cut patr and then fry dough in hot oil
• After frying dry the puff puff or beignet by putting them into a new brown bag and shake it up to remove Let of the oil
•Let cool for 10 minutes and serve

Serving
This can be eaten with Sautée beans or serve as an appetizer

Makes upto 50 to 60 puffs puffs; need more? Double or tripple the measurement of ingredients.

Egg Noodle a la Saucisse

Dear Readers, 

How are you doing today? Especially with the Father's Day Celebration. It sure has been a celebration weekend for me; Saturday June 15 was my birthday, and today is Father's Day. Still in the celebration mood, my boys and I crafted something special for their Dad. Check this out: 

Dad loved his present, and the boys enjoyed doing the craft work.
As the clock was ticking, and fast getting to lunch time, I dig deep in my mind for a quick and easy recipe; as I was still in the celebration mood. The boys loved it, and even asked for more. I hope it's the same with yours? 

Ingredients:

• 2 pack of Instant 'longlife' egg noodle or any other type.
• 2 tbsp. of soy sauce
• 3 tbsp of olive oil
• 1 big carrot
• 4 sausages
• 1 chicken cube

Preparation:

• Bring a small pot of water to boil, add egg noodles and cook uncovered on MAX for 5 mins. Drain.
• Add 1 tbsp. of olive oil and 2 tbsp. of soy sauce to the cooked, drained noodles.
• In a medium saucepan, pour 2 tbsp. of olive oil to high; tossed in square cut carrots till glaze; add cut sausages, and let it simmer for 5 mins. Add 2 pinches of thinly chopped parsley for flavour.
• pour in the noodles in the glazed carrots, and sausages. Sprinkle the chucked cube for taste, stir for 2 mins.
• This recipe makes four servings.
• Suggested drink, can be 2% milk and vanilla yoghurt smoothie.

Note:
• cut the carrots and sausages to your infants desired size.

Juicy Steak, Celery Potatoes & Glaze Carrots

Good day my dear readers,

How are you tonight? I had quite a relaxing day, and thought of doing something different for my babies. They are growing up, so why not make some grown up dinner!

Tonight on the menu is:



Juicy Steak, Celery Potatoes & Glaze Carrots

• Preheat oven to 350 degrees on bake
In an oven  pan marinade four thinly cut steaks with the following: two tbsp of salty butter, one tsp--dry celery, powder onions, powder garlic, steak spice, black pepper and one chicken cube.
• Marinade it well with a spatula (tips: for a good marinade use your fingers- gets the spices in your steak
• leave it to marinade for an hour
• place steak in oven, and let it cook for 35 mins.
• In a sauce pan, bring to boil one cup of water with half tsp of salt, and one tsp of dry celery;
• Add in your potatoes and let it cooked for 40 mins. Or till well steamed;
• In another stir fry pan, melt two tbsp of butter;
• Toss in peeled and thinly sliced carrots-- let it cook till glaze

Serving:
you can cut the steak depending on your baby's age.
You may also thinly slice the potatoes to serve.
The glaze carrots gives it a natural sweetness, which your baby will enjoy.

Healthy Cereals and Fruity snacks

Good evening my dear readers,

I hope you are having a spectacular Sunday. As for me it's been quite a busy day catching up on errands for the following  week. Knowing that I and my boys were going to be out for a while, I thought of making some healthy snacks that will hold them through till lunch time. Because they had a good bite of it, I said why shouldn't I share this with you?

Cheerios cereals, grapes, and gala apples
• In a bowl with lid, toast in some Cheerios cereals, grapes and pealed sliced apples.
• shake the bowl to give it some good mix; this is quite fun, as they have a bite of all three at the same time;
• you may accompany this snacks with some water, especially on hot days
